emails will be the death of me
This brings me to my next thought...
I have started the 40 bags in 40 days challenge! Basically its to get rid of crap you don't need in your house by donating it or throwing it away and organizing your house. I am on day 3. The first day I cleared my dresser and got a bag of trash and a bag of donations. The second day I got 2 bags of donations and a bag of trash from just going through some laundry baskets we had laying around my room. Today I have already purged my email (yes, that counts!) and I will also finish picking up the floor in my room. So far I have even had help from the kids! Z and K both have loved helping me, so far lol. Z is also (almost) potty trained! YAY! Now if we can just get her to #2 in the potty that would be great. Anyway, I need to go get something done. Knee Deep In Chicken....
I was kind of dreading the pickup since I had never done it before. I had ordered a 40lb box of boneless skinless chicken breasts at $1.89lb. I wasn't sure how the pickup worked. Would I have to carry a 40lb box of raw chicken back to my car? Plus, I had a car full of little kiddos and grandma. Our pickup was between 2 and 2:30...if you were late, well, your chicken would probably be donated. I put the address in my gps. It was only about 20 minutes away so that's not that bad. To keep prices low Zaycon invites churches or other businesses to be a pickup location. I pull into the church parking lot and right away I see the Zaycon truck and a line of cars. To my surprise, I don't even have to get out of the car! I waited in the car line. When it was my turn I told the guy my last name and he got a box of chicken out of the truck. He put it in my car. Yay! He even laid a piece of plastic down before placing the chicken down. It was awesome! I thought I would be in a long line of people waiting forever but I was done in 5 minutes!
The chicken comes packaged in 4 bags. First, I took about 15-20lbs of chicken put them in two pots with onion, garlic, carrots, and celery and covered it with water. I put them on to boil. (Side note, these are some of the biggest chicken breast I have ever seen before!)
They had hardly any fat on them. They were very well trimmed which made it a lot easier on me. I trimmed the remaining fat and my mom wrapped them in paper and plastic wrap. We didn't weigh them but I guess that each breast was 1-1.5lbs each. We wrapped them individually because one would make a meal for our families. I did cut a couple of them into chunks. After we got all the raw chicken packaged and in the freezer I checked on the boiling chicken. I pulled the chicken out and put it in a bowl. Then I used the hand mixer to shred it. (It sounds weird but it really works!)
We put the shredded chicken into labeled baggies and into the freezer.
We used a slotted spoon to get the vegetables out of the stock. I put some cheese cloth over a strainer and poured the stock through it. While I waited for it to cool I set the containers out. My mom ladled the stock into each cup slowly. We got 19 16oz containers and 1 32oz!! Happy dance!
It took about 3hrs to do all this. I was very lucky to have my sister helping to watch the 3 kiddos :) My mom and I will split everything and end up with roughly 20lbs of chicken and 1.5 gallons of chicken stock each!
I loved my experience with Zaycon!! I haven't tasted the chicken yet but it looked like great quality chicken. I have already ordered my 40lbs of 80/20 ground beef! I definitely recommend Zaycon so give them a try! Here is my referral link... zayconfresh.com/refer/zf63553

Yay for preschool!
A couple days a week I get a short break from my oldest kiddos who both go to preschool. Its always hard to decide if I will spend the time relaxing or catching up on chores. Today I decided to do a little of both ;) T is usually a very laid back happy baby so he didn't mind running to Walmart to grab some cake supplies for all the up coming birthdays. I've already been on Pinterest (haha) and decided to make a peppa pig cake using marshmallow fondant for Z and a kit kat cake with a ninja turtle action figure on it for K. Pinterest always makes things look so easy so I hope it really is. Lol.
Since I was already at Walmart I decided to check out the toy isles. My daughter just loves peppa pig, as you know, and I wanted to see what toys they had. To my surprise, Walmart had no Peppa Pig toys!! What?! I thought this was a popular show?! Why are there no toys? I don't get it. Luckily I ordered her a few things already. I just hope they get here for her party.
The Lego table is coming along. My neighbors were nice enough to cut the hole for the basket and sand the top of it. I am so grateful for them! Once I get it back today I want to spray on the primer. I also decided to do another project. The kids have a train table that has seen better days, in fact, the leg is about to fall off. Lol. I'm going to prime and paint the frame blue like the Lego table and the top with chalkboard paint! I think the kids will enjoy drawing their own roads. My husband ended up buying a new piece of ply wood for the top.

Organizing my pantry
Well, my mother in law was kind enough to take my son for a few days so i had some extra time today. I downloaded an app called 'out of milk'. You scan everything in your pantry and it makes a list. So you always know what you have. I spent the day taking everything off the shelves, scanning the barcode of each item, then organizing it back in the pantry. I still have a lot to do but its nice to be able to see my can goods better lol
For dinner I made ranch chicken tacos in the crockpot. The actual recipe isn't a crockpot recipe but i made it into one. I put boneless skinless chicken in the crockpot with taco seasoning, 1/2 cup ranch, and a little bit of water. Once it was falling apart I split it up and put it soft taco shells with lettuce and a little ranch. These were so easy and yummy! I hope you give these a try!

I hate Mondays!
Today was a lazy day. I didn't get much sleep the night before. My son of course was up at 630am jumping off the walls lol. For dinner my hubby made hamburgers with a 'secret sauce' that's not so secret, at least not if your from the west. Fry Sauce, as we like to call it. Its just ketchup & mayo. Some may think its weird. But try it! You may find you like it. We tried a new recipe for the burgers using sweet baby rays bbq sauce. They totally fell apart but they still tasted good. Next time we will try adding less bbq sauce and hopefully they will stay together better. I also made a salad with a dressing recipe i found on pinterest. Its a copy cat of olive gardens dressing. I love their dressing so i couldn't wait to try this! This has a ton of Ingredients in it so be prepared. Although i had all but a few in my cabinet. I threw all the ingredients in the blender and i was done! It made two bottles full. It tastes wonderful and tastes almost just like olive garden! Ill post both recipes below if you'd like to try!

Homemade granola bars!

We have to wait two hours before we can try these but they smell and look so good. These were super easy to make! Took under 5 minutes total! Just melted the butter, honey, and brown sugar together, added vanilla, poured over rice cereal and quick oats! Smash in cookie sheet, sprinkle with chocolate chips...DONE! Wait 2hrs+ before cutting them. I hope they taste good, ill let you know!

UPDATE!- These taste delicious! The only problem is they are falling apart :( i read that i can stick them in the fridge for a few minutes to harden so im going to try that. Definitely recommend if you want a good "healthy" snack!

Dinner tonight-pork chops
My mom gave me two super thick pork chops that she got from Costco. I was originally going to stuff them but I found a different recipe. I made some stove top stuffing and put it in a casserole dish. I put the chops on top of that. Then mixed together chopped green apple, sugar, cinnamon, and flour. Put that on top the chops, covered and baked an hour. So yummy! Even my little 2yo gobbled it up and said "mmmm, good"! I kindof just took a recipe and did my own thing with it. I forgot to take pictures of the deliciousness, sorry.
Well tomorrow is friday, my favorite day of the week! Why you might ask? Well thats the day my son goes to preschool and mommy gets a break! :) Tomorrow my sweet baby girl is getting her picture taken! I hope she smiles! Ill write more tomorrow!

New restaurant in town
Last night my husband wanted to try out this new pizza place called "Little Texas". We hear they had a buffet for only $5.49 a person and 3 and under free! We ended up being the only people there. They just opened Dec 20th so I don't think many people know about it yet. We were greeted by a friendly waitress and a very clean and inviting restaurant. Although we were the only ones there, the buffet had fresh food on it and they even added new pizzas. Everything looked delicious! I tried the spinach alfredo, pepperoni, and macaroni & cheese pizzas. It kind of reminded me of ci ci's but the pizza had a lot more flavor. On there buffet they offer pizza, pasta, soup, salad, and for dessert cinnamon rolls and pudding. Its not a huge buffet but I think its well worth the price of $5.49 (It will be $6.49 after Jan 20th). The cinnamon rolls are so moist, gooey, and incredibly good! Good quote
I saw this quote on a church billboard and thought it was pretty cool. "A Christian must keep his faith, but not to himself" I struggle with this some times. Not in the way I would ever deny my beliefs but with sharing it with others. Im always affraid that just because i'm different then others I will be judged for that. My goal for this year is to share more of what I believe and what "The Church Of Jesus Christ Of Latter Day Saints" teaches. I want others to experience the happiness my faith brings me. That is all for now.

Dinner "almost" ruined
Well, i cooked the stew meat in the crockpot all day, according to the recipe. It turned out great! I continued to follow directions and put the burritos together. Broiled them to make the cheese nice and bubbly. Looked delicious! (I've included a picture) i took a bite and it tasted a little too salty. I said to the family, "sorry guys, i added a little too much salt." My husband said "it's ok hunny, we will survive ". Then it hits me, he had checked on and stirred the meat a few times before we ate. I asked, " Wait, did you add salt?" His response was a very quiet "yes." I said, " so you were going to let me think i had added too much?" Lol "yes" Oh my husband, you cant get away with anything! *grinning* we were still able to enjoy our dinner even though it was a tad salty :) I totally recommend this dish, especially if you love burritos! I will be making it again but not adding ad much salt...wink wink. The website for this recipe is in a previous post. Check it out!
Peanut butter cookies
I got some peanut butter "holiday" cookie dough cheap at Kroger. I made these cookies and froze the other half of the dough. Yummy! If you see this at your store snatch it up! You can freeze this for at least 2mos!
Flylady
Can any of you keep a clean living room for more than 5 minutes with a toddler? Ya I haven't figured that out yet either! Lol! I have found an awesome website to help keep up with the cleaning. Its called flylady.com! Its free! The "FlyLady" breaks your house into zones to make it easier. For example, one week you'll be concentrating on the kitchen. Each day she will email you a task to do...like, wipe down the fronts of your cabinets. You spend 10-15 min at a time doing it. You also have tasks that you make a habit of doing every day. (I'll be honest, I have not yet mastered doing these every day. But, when I do them it makes my life ten times easier!) Take a look at the website, it is awesome!
So for today, I plan to clean downstairs, finish laundry, while also nursing my little girl and entertaining her very active brother! Busy day :) At least I already put dinner in the crockpot. Tonight we will be having...Chile Colorado Burritos!
